坂茂是經手世界各地大型建築設計的藝術家,同時也在各地提出使用以紙管為結構體打造的臨時住宅,為災害與流行疾病提供協助。此次建築設計的珠洲劇場博物館的餐廳・商店,以檜木壓縮成如鋼筋形狀的結構體為主軸,是世界首創的方法。

本餐廳的菜色由金澤市頗有名氣的葡萄樹餐廳總廚–米田岳人主廚監製的,食材乃是大量使用珠洲當食材。在四月的試吃會提供的三道菜與甜點就是使用珠洲捕獲的海鮮和大濱黃豆。未來將持續進行審慎評估,考慮放進讓人聯想能登鄉村海洋的菜單。

While planning major architectural projects around the world, Shigeru Ban also proposes designs supporting disaster and pandemic relief in various places. Such work includes temporary housing units created with paper tubes. This time he designed the Suzu Theater Museum’s restaurant and shop, which is the world’s first building to use compressed Japanese Cypress for steel frame-shaped structures serving as its axis.

Budo-no-Ki Kanazawa
Supervised by Executive Chef Takehito Yoneda, the menu offers dishes that fully utilize Suzu ingredients. Three dishes using Suzu seafood and Ohama soybeans and a dessert were served at the tasting event held in April. The menu will continue to be refined in the future, with dishes devised with the image of satoyama and satoumi.
